A hands-on, nose to tail, pasture to plate pork processing workshop over the course of a weekend at a working permaculture homestead.

Join us for the first annual PorkShop at Wonderland Hollow : a weekend “hock” full of stories, lessons, meals, and knowledge sharing all about processing pork—from hoof to plate.

Six hands on porky sessions include fireside lectures, early morning demonstrations, and workshops with topics ranging from choosing the “right” animal for you, ethical dispatch, and whole animal breakdown to curing, brining, and sausage making.

Six “Pasture-to-Plate” Catered Meals : sourced from Wonderland Hollow where possible, with support from our peers and friends where not.

September 23rd from 4:00 PM until September 25th at 4:00 PM. $500 per person. Price includes workshops, lectures, and meals.

Take home materials : Worksheets and notes, Applied Anatomist sausage pricker, AND a butcher's choice meaty goody bag.
